Ok, I admit this doesn't look very yummy. But it is one of my kids favorite breakfasts. As a kid my mom would take leftover rice from the dinner the night before and oil to a skillet and brown the rice until it would get some crispies. Then she would crack a few eggs on top of it and scramble them into the rice. When it is all cooked and not too gooey she would salt and pepper it and add some cheese.
Well needless to say we had rice for dinner and rice for breakfast. Ahhhh, it is going to be a great day.
